The things from Hellsing that grabbed me 
were it's unique style (mix of vampire hunter D
and some jazzy laid back stuff from cowboy bebop)
was it's interesting choice of music... use a jazzy 
japanese vocals beat for the opening and a poppy english
beat for the ending... interesting indeed.
